Olives can be dried in two ways: 1. Putting the olives in layers with coarse salt to extract the bitterness. 2. Soaking the olives in a 10% salt solution for almost a year using natural fermentation, to get rid of the bitterness and then drying the olives. Enjoy dried olives as a savoury snack with a glass of wine, or add to a salad or bread dough.
